Chicken Pho

Chicken Pho is a delicious and easy way to use fresh herbs and veggies from your garden. We’ve gone for the easy recipe using premade chicken stock as our broth base, but if you have the time you can also branch out by making your broth from scratch. Make sure you pile in heaps of fresh coriander for an added punch of flavour! Feel free to swap out the garnishes based on what your harvesting from your garden now.

Ingredients

1 Chicken breast – (half a breast per serving)
1 onion chopped
1 Inch stick ginger chopped or grated
1.5 cups of good quality chicken stock per serving
1 packet rice noodles



Garnish (choose from the below or swap out for other fresh herbs and produce from your garden)

1 cup fresh coriander
4 spring onions
2 cups mung bean sprouts
1 cup fresh mint
1 cup thai basil
1 chili freshly chopped
4 lime wedges

Method

  1. Saute the onions and ginger in a large pot,
  2. Add the spices and the pre-made chicken stock
  3. Simmer stock mixture for 15-20 minutes
  4. While simmering the stock, add oil and cook chicken breast in a medium fry pan. Prepare any fresh vegetables. Cook the Rice noodles according to the packet instructions
  5. Add the cooked chicken, noodles, and garnishes to a serving bowl.
  6. Ladle soup over your ingredients
